Ingredients:
Cheese Stuffing
1/2 cup smoked shredded cheese (provolone or gouda)
8-oz package mozzarella cheese, shredded
1/4 cup Parmesan cheese, grated
1/2 cup breadcrumbs
1 tsp fresh garlic, minced
1/4 tsp crushed red pepper flakes
2 Tbsp sun-dried tomato slivers (drain first if in oil)
1/3 cup green onions, thinly sliced
3/4 cup sour cream (6 oz)
1/2 tsp salt
1/2 tsp black pepper
Sauce
1 small onion, cut in half and thinly sliced lengthwise
24 fl oz Marsala wine
8 fl oz heavy cream
2 small containers button mushrooms, thinly sliced (6 cups)
Salt and pepper to taste
Other
2 lbs skinless, boneless chicken breasts
4 fl oz olive oil
2 cups all-purpose flour
Instructions:
1. Pre-heat oven to 350°F.
2. Mix all the cheese stuffing components into a mixing bowl.
3. Pound every breast of chicken between 2 sheets of plastic wrap until they are ¼ to ½ an inch thick.
4. Spoon desired amount of cheese stuffing into one lobe of each chicken breast. Fold over so cheese stuffing is contained.
5. Heat sauté pan, adding olive oil and flour. Season to taste with salt and pepper. Put the chicken breast in flour, shaking off excess and sauté in preheated oil, cooking until each side is golden brown.
6. Take away chicken from pan, place in a baking dish and bake in oven for 10-20 minutes.
7. Add onions to sauté pan and stir to loosen chicken drippings. Add mushrooms.
8. Heat wine to a simmer and add heavy cream. Simmer on low heat until mixture is reduced by half.
9. Place cooked chicken breasts on a plate and top each with the onions, mushrooms and sauce mixture.
10. Serve with vegetables, mashed potatoes or rice, and enjoy your delicious creation!

Why not try it out for yourself? Vary the amount of cheddar cheese you add to change the “cheesiness” of the taste. Test out dissimilar amounts of cheese to find just the right balance for you. I like just a small amount for a more subtle flavoring, as well as moderate amounts for a balance between the original red lobster taste and the cheesy taste. I rarely go for the recipes which add so much cheese that it overpowers the original scent of the red lobster.
2) I like cheddar cheese with red lobster biscuits because of its moderate strength.

If you are allergic to cow’s milk, but not lactose-intolerant, try cheese made from goat’s milk.
